U.S. speedskater brings the same discipline to culinary pop-up Sisu

While he’s been working in kitchens since 16, Ryan Shane has put his efforts into his own project which he started two years ago. Sisu is his fine dining pop-up restaurant that hosts omakase-style dinners in the Park City and the Salt Lake City valley where he lives — it’s his way to bring the fine dining he loves in other states to his home.
